الخبز المسطح هو منتج غذائي تقليدي رئيسي في منطقة البحر الأبيض المتوسط منها إيطاليا وفرنسا واليونان ومالطا وكرواتيا والأردن ومصر وإسبانيا والبرتغال ولبنان وقد اكتسب اهتماما كبيرا من قبل المستهلكين والصناعات الغذائية في منطقة البحر الأبيض المتوسط. يعتمد مفهوم مشروع FLAT BREAD MINE على استكشاف تقنيات جديدة وابتكارات في طرق الانتاج والتصنيع والمكونات المستخدمة لتطوير واتاج خبز مسطح صحي للمستهلكين في منطقة البحر الأبيض المتوسط. ان مشروعFLAT BREAD MIN له معنيان ، يمكن فهمهما واعتبارهما على أنهما طموحان : 1) إنشاء بنك معلومات لتكون مصدر علمي وعملي لتطوير خبز مسطح أكثر صحة وأمانا . 2) معرفة و تحديد المكونات المناسبة لتكييف " FLAT BREAD MINE" لكل مستهلك من أجل الحصول على خبز غني بالعناصر الغذائية . يهتم مشروع FLAT BREAD MINE في الخبز العادي والذي يمكن وصفه بالحاوي على الجلوتين والخبز الخالي من الجلوتين ويهدف إلى تطوير طرق مستدامة ومريحة لتداول الخبز المسطح خلال السلسلة الغذائية للخبز .

الأهداف

O1: To establish a FB database. O2: To develop gluten & gluten-free FB. O3: To develop an innovative low-pressure mixer. O4: To develop an innovative low-pressure oven technology. O5: To develop new FB recipes & processes. O6: To ensure FB safety. O7: To develop sustainable and marketable FB solutions by the LCA (Life Cycle Analysis) and LCC (Life cycle Costing). O8: To ascertain the acceptance of the processes and new products by consumers & industry from the MA.

الأهداف

FBM project’s main impacts include: 1) bringing attention to the innovation phase by detecting possible innovation that could yield the know-how or patents; 2) improving the Science & Technology capabilities, the innovation potential, and the competitiveness of the industries taking part of the project; 3) stimulating the leverage effect on private investment as the added-value to develop new equipment and markets; 4) stimulation of the cooperation of the companies of academic partners & technical canters at the national and the Mediterranean area levels; 5) reduction of the commercial risk by making existing research results applicable across the MA and beyond.

ستقوم الشراكة من أجل البحث والابتكار في منطقة البحر الأبيض المتوسط بوضع نهج جديدة للبحث والتطوير لتحسين توافر المياه والإنتاج الزراعي المستدام في منطقة تعاني بشدة من تغير المناخ والتحضر والنمو السكاني.

برنامج PRIMA هو مبادرة Art.185 مدعومة وممولة في إطار Horizon 2020 ، البرنامج الإطاري للبحث والابتكار التابع للاتحاد الأوروبي.
